What I Eat in a Day — No. 1

 

I recently picked up Kelly Leveque’s new book Body Love Every Day and it is chock-full of great recipe ideas - whether you’re on the go or whipping something up at home. I was inspired to create a new series called “What I Eat in a Day”. This will be a weekly series you can follow along to see how I nourish my body with healthy eating choices. I hope it inspires you as well to make healthy choices and even get some recipe ideas!

BREAKFAST

Over the weekend, I had made some almond flour raspberry muffins. They are soo delicious and convenient for taking on the go (or enjoying warmed up at home while sipping coffee).

LUNCH

For lunch, I ran home to make a simple salad (I work about five minutes from home, such a luxury!). You will see a lot of these on rotation. This one is simple mixed greens with kimchi, mashed avocado, and a glug of my favorite olive oil with a squeeze of lemon.

SNACK

I am often so busy running around the office from meeting to meeting that I usually don’t have any intentional snacks that I bring. We typically have some healthy snacks on-hand like mixed nuts or hummus/carrots if I get hungry. Remember not to be fooled by most “healthy” granola bars (cliff bars, thin bars, etc.) that may be lurking around the office. These often have lots of processed/unhealthy ingredients and/or high sugar content. I try to avoid packaged food in general, but if I’m low on options, I will check to make sure it’s low in sugar (under 5 grams). I also drink a lot of water and herbal tea throughout the day. This particular Wednesday, I didn’t have a snack.

DINNER

Dinner doesn’t get any easier than baked salmon and veggies. When I am not feeling like cooking after a really long day, this is my go-to as it cooks itself. A trick for the broccolini and brussels: to speed up roasting time because the salmon cooks in around 16 minutes, I blanch them in boiling water. Then toss them in olive oil and spices and bake with the salmon.
