Delicious Spicy Fermented Coleslaw
Inspired again by Kelly Leveque’s Body Love Every Day, I made one of her recipes for fermented coleslaw and it was fantastic (hello fiber and fermented gut-health goodness). It is paleo/keto-friendly as well! I made a few adaptations for a slightly spicier take — swapping kraut for kimchi and adding some pepperoncini. Filed under: perfect quick and healthy lunch.
SPICY FERMENTED COLESLAW
1 bag of shredded cabbage (I used green and red)
1/4 cup primal kitchen mayo
1/4 cup kimchi
2 tbsp pepperoncini
a squeeze of half a lemon
2 tbsp olive oil
Sprinkle of sliced almonds
Shake of Himalayan salt, cracked pepper, and garlic powder
