Healthy Grain-Free Morning Muffins
Over the weekend, I had made some of my favorite almond flour muffins and wanted to share my take on the recipe. They are soo delicious and convenient for taking on the go in the morning or for a mid-day snack. This weekend, Matt and I enjoyed them while sipping coffee and snuggling with Lottie our pug. #idealsunday.
GRAIN-FREE MORNING MUFFINS
Ingredients:
1 cup and 2 tbsp almond flour
1/2 cup ground flax seed
2 tbs chia seed
1 egg
2 tbsp coconut oil
1 scoop protein powder (I use primal kitchen vanilla collagen)
shake of cinnamon
1 tsp vanilla extract
a handful of sliced almonds
fruit of choice (I love these with raspberries or blueberries or even coconut flakes
If feeling extra naughty, I like to add a few crumbles of 100% cacao — look out!
Bake for around 375 F for 13-15 minutes.
The variations with these are literally endless — I’m talking banana walnut, cranberry almond, blueberry almond butter, etc. etc. Pretend you are at your favorite bakery and whip up the same treat — only healthier!
