Paleo / Keto / Whole 30 Alfredo Sauce
Again, here I come with a healthy spin on some classic comfort foods. You’re welcome. As the weather starts to cool down, what sounds better than some rich, fresh, creamy alfredo? I recreated this with the same creamy, garlic flavor we all know and love sans the heavy cream and butter and it’s YUM.
1 head of cauliflower
1/2 cup almonds (or cashews)
2 tbsp nutritional yeast
1 cup bone broth
1 tbsp extra virgin olive oil
1 tbsp garlic powder
1 tbsp onion powder
2-3 cloves of garlic
Himalayan salt and cracked pepper to taste
Trim cauliflower and steam in pan with 1/2 cup water, lid on. In a blender (note: I used a Vitamix to ensure it’s extra smooth and creamy, you can still achieve a close-enough consistency in a regular blender or nutri-bullet) combine all ingredients and blend. Serve on top of your choice of noodle - spaghetti squash, zoodles, or the real deal. In this dinner, I tossed with egg linguine, evoo, asparagas, and peas. Classic, healthy, and delicious.
