Blueberry Muffin Smoothie Recipe
Also known as liquid gold.
As the name states, this collagen and antioxidant-filled smoothie quite literally tastes like a blueberry muffin. I love to kick-off my days with a nutrient-dense smoothie filled with healthy fat, fiber, greens, and protein. This keeps me full through the morning until lunchtime. Thought I would share this recipe as it’s my absolute favorite morning treat.
Ingredients
2 handfuls spinach
2-3 tbsp creamy almond butter
2 tbsp chia seeds
1.5 cups almond milk (I use Malk or sometimes a mixture of Malk/water)
1 scoop Primal Kitchen Vanilla Coconut Collagen Powder
1/4 cup organic blueberries
Handful of ice (on top)
I use a Vitamix to blend, but any blender will do. I basically use this same formula as a base for all my smoothies but will change up the fruit depending on my mood. It’s also really delicious with raspberries, or banana (with a little cacao) yum.
Do you like to start mornings off with a meal? Occasionally, I intermittent fast and will have this for lunch. I know some people think smoothies are hard in the colder months, but I don’t mind. Let me know if you give this one a try!
