Healthy Thai Salad (Paleo/Keto Friendly)
I’ve made this salad at least three times / week since first making it. To die for.
The dressing is game over: a healthy take on the classic tangy peanut sauce + plus so many greens. I’m always looking to expand my repertoire for healthy, quick lunch ideas.

Shredded carrot
Broccoli slaw
Arugula
Almonds
Green onions
Cucumber
Cilantro
Dressing
2 tbsp almond butter
1 tbsp rice vinegar
1 tsp coconut aminos
Drop of maple syrup
Dash of hot sauce
1 tsp of water
