Insanely Good Dairy-Free Mac and Cheese

This recipe is a healthy alternative to mac and cheese perfected—sans dairy and the gluten After a lot of trial and error through the years, this recipe is everything. So simple and tastes like the real deal (!)
Mac and Cheese
1/2 cup coconut milk
1/3 cup coconut oil
2 tbsp coconut four (or tapioca/arrowroot flour)
2 garlic cloves
Shake of garlic powder, chili powder, s/p
1 heaping tbsp of almond butter
3 1/2 tbsp nutritional yeast
1 tsp rice vinegar
Tiny amount of Dijon mustard (1/2 tsp ish)
Combine all ingredients in Vitamix (or blender) and mix well. Heat over stovetop for 3-5 minutes. Combine with pasta of choice, these are Banza chickpea shells.
