Comfort food healthy alternatives—I’m obsessed with taking recipes I love (and crave) and re-envisioning them with a healthy twist.

This recipe is a healthy alternative to mac and cheese perfected—sans dairy and the gluten ‍ After a lot of trial and error through the years, this recipe is everything. So simple and tastes like the real deal (!)⁣

Mac and Cheese

  • 1/2 cup coconut milk ⁣

  • 1/3 cup coconut oil⁣

  • 2 tbsp coconut four (or tapioca/arrowroot flour)⁣

  • 2 garlic cloves ⁣

  • Shake of garlic powder, chili powder, s/p⁣

  • 1 heaping tbsp of almond butter ⁣

  • 3 1/2 tbsp nutritional yeast ⁣

  • 1 tsp rice vinegar⁣

  • Tiny amount of Dijon mustard (1/2 tsp ish)⁣

    Combine all ingredients in Vitamix (or blender) and mix well. Heat over stovetop for 3-5 minutes. Combine with pasta of choice, these are Banza chickpea shells. ⁣
